Oliver’s Shakshuka

A delicious Middle Eastern / North African dish, great for breakfast or brunch.

A simple and satisfying Shakshuka filled with organic spices.

INGREDIENTS

  • 500g fresh tomatoes
  • 1 onion
  • 200ml water
  • 2tbs ground cumin, cinnamon, all spice and oregano
  • Drizzle of olive oil
  • Broad beans (optional)
  • 1 pepper
  • 4-8 egg
  • Saffron (optional)
  • 200ml water
  • 3 garlic cloves
  • 1tbs harissa or chillies

METHOD

  1. Sweat the onions, peppers and garlic for 10 mins in a large pan using a small amount of oil
  2. Add the spices, tomatoes, harissa, 200ml water along with broad beans (if using)
  3. Cook for a further 20 mins or till desired consistency is reached
  4. Crack in 4-8 eggs
  5. Transfer the pan to the oven at 180°c for 10 mins
  6. Serve with fresh coriander if you like and some salsa
