Oliver’s Shakshuka
A delicious Middle Eastern / North African dish, great for breakfast or brunch.
A simple and satisfying Shakshuka filled with organic spices.
INGREDIENTS
500g fresh tomatoes
1 onion
200ml water
2tbs ground cumin, cinnamon, all spice and oregano
Drizzle of olive oil
Broad beans (optional)
1 pepper
4-8 egg
Saffron (optional)
200ml water
3 garlic cloves
1tbs harissa or chillies
METHOD
- Sweat the onions, peppers and garlic for 10 mins in a large pan using a small amount of oil
- Add the spices, tomatoes, harissa, 200ml water along with broad beans (if using)
- Cook for a further 20 mins or till desired consistency is reached
- Crack in 4-8 eggs
- Transfer the pan to the oven at 180°c for 10 mins
- Serve with fresh coriander if you like and some salsa
